Today I made some gluten free, vegan Totquitos. Eat and stay hydrated with me! This episode was recorded in front of a live cam room audience and includes their participation through the chatroom. Recipe:
Step one: Preheat oven to 350 F
Step two: Pour a bag of frozen vegan tots into a frying pan and defrost over medium heat, stirring regularly and smashing them down, turn heat down to medium low once defrosted
Step three: Heat up a bag of corn tortillas in a small frying pan until they are all warmed
Step four: Add two beyond burgers to the frying pan with the tots and break apart with a spatula
Step five: Season tots and beyond burgers with pepper, garlic powder, and onion powder
Step six: Pour one container of Just Egg egg replacement over the Beyond meat and tots, stir regularly until cooked through
Step seven: Add cashew sauce or vegan cheese to the tots, burger, and egg filling, stir, remove from heat
Step eight: Place a small spoonful of filling in the middle of a tortilla, roll up tightly and place seam side down in a baking pan, repeat with the rest of the tortillas
Step nine: Drizzle some coconut oil over the top of the totquitos and sprinkle with salt
Step ten: Bake for 25 minutes
Step eleven: Eat!
