Date - 23rd August 2018 I met Lizzie on this date an avid meat eater. Slightly overweight, feeling sluggish and didn’t really have any idea of what being a vegan is or means. Date - 25th August 2018 On this date I decided to adopt a fully vegan lifestyle. Simply spending time listening to Lizzie during her shows gave me a whole new perspective on what we put into our bodies. Because of this insight I decided that day to immediately go cold turkey from all animal foods and products. This led to Lizzie creating her converted vegans club with me as the first member. Two years later and I am still 100% plant based. This is mainly due to Lizzie also expanding herself outwards in different ways, such as creating a podcast, cookbook and recipe guides. All of this combined with the daily conversations with Lizzie ingrained a source of personal inspiration, motivation and knowledge that I will always keep with me. I do not think I would be in the place I am in now without Lizzie’s guidance in the early months. Her exuberance and passion for veganism shines through each one of her podcast episodes and is a great source of knowledge, fun and inspiration. Becoming a vegan has literally changed my life. Not only in the physical sense, but the mental side. I am making a difference to the world, saving animals and helping the environment. In terms of things that I am proud of, being vegan is at the top. And it wouldn’t of happened without Lizzie. I am a plant-based athlete, long-distance thru hiker, and nature lover who has been vegan for nearly a year.  Thanks to Lizzie’s helpful guidance and supervision, I was able to go fully plant based as of January 2020, and haven’t looked back since.  As someone who has always been passionate about the environment and about my health, going vegan was one of the most positive and influential decisions of my life, and I feel healthier and stronger now than ever before.  For example, in 2020 I was able to set new personal records in terms of my calisthenics and long distance hiking goals, increasing my overall endurance and lean muscle mass--the exact opposite of what many might expect.  Before going vegan, I did quite a bit of research on the benefits of a plant-based diet for athletes looking to build muscle, and discovered that plant based diets are highly beneficial for reducing inflammation, shortening recovery times, and increasing longevity overall.  If you are looking to go vegan or just integrate more plant-based recipes into your diet, I highly suggest you turn to Lizzie for help.  She is a long-time vegan who has studied nutrition for years and is also a certified holistic health coach.  Her cookbook and podcast have really been a huge inspiration for me as a new vegan--I can’t recommend these highly enough!
